Taco Pie Recipe
2 boxes of Jiffy corn bread mix
1 jar of salsa
1 canned green chilies
1 canned beans; refried
1 canned kernel corn (whole); drained
1.5 lbs beef; ground
2 c of cheese (Pepper Jack)
2 cloves of garlic; crushed
1 onion (medium); chopped
1 Tbsp margarine
Prepare the cornbread mixture as stated in the package instructions but adding half a can of drained corn. Set it aside.
Place a medium-sized skillet with margarine over medium heat. When the margarine melts, toss in the garlic and onions. Once the garlic turns light brown and the onion becomes transparent, add in the beef and saute. Drain the fat.
Tansfer to a large mixing bowl. Add in the chilies, salsa, one cup of the cheese, and the remaining half of the corn.
Preheat the oven up to 350 degrees F.
Spread the refried beans evenly on an oiled glass baking dish (9×13x2 inches). Top it with the beef mixture, followed by the remaining half of the cheese. Top it with the prepared cornbread mix; and bake 20 minutes.
