Sausage and Rice Casserole Recipe
1 onion (small); minced
1 pc green pepper; sliced
1 can of tomatoes (16 oz); sliced
1 c of water
3/4 c of rice
1 lb of pork sausage
Place a medium-sized skillet with veggie oil over medium heat. Once the oil is hot, toss in the onions, sausage together with the green bell pepper. Saute ’til the onions and pepper are cooked and the sausage turns light brown.
Then, add in the diced tomatoes, water and uncooked rice. Stir until well-blended. Reduce to low heat. Cover it; and then simmer for ’til the rice is cooked (about 15-20 minutes). Stir occasionally. Serve it with fried chicken.
