Salmon-Filled Quesadillas Recipe
1 tsp of veggie oil
1 canned salmon (14.75 oz); drained, skin and bone removed
1-2 Tsps of basil (dry)
1/2 tsp of pepper
1 Tbsp of butter (or margarine); softened
2 cloves garlic; chopped
4 pcs of flour tortillas
2 c of cheese (8 oz); grated
Salsa
Place a nonstick skillet with veggie oil over medium heat. When the oil is hot, saute the garlic together with the salmon, pepper, salt and basil. Stir constantly ’til brown. Remove from the heat, and then set aside.
Spread a thin layer of butter on one side of each tortilla. Heat an electric griddle or another nonstick skillet (with flat bottom). Lay the tortilla onto the skillet (buttered side down).
Spread half a cup of cheese followed by half a cup of the salmon filling on half of the tortilla. Afterward, fold the other half over the filling. Cook it over low heat for about 2 minutes per side.
Slice the quesadilla into equal wedges, and serve it with tomato salsa, sour cream and green pepper chutney.
