Rice and Beans Casserole Recipe
Veggie oil
1 can of “cream of mushroom” soup
3/4 tsp of Creole seasoning
1 lb of sausage (smoked)
1 canned chilies (green) & tomatoes (10 oz)
2 canned red beans (16 oz); not drained
4 to 5 c of rice (white); cooked
Slice the smoked sausage into one-inch thick chunks. Place a large nonstick skillet with veggie oil over medium heat. When the oil is hot, cook the sausages ’til brown.
Stir in tomatoes, Creole seasoning, red (or kidney) beans, and cream of mushroom soup. Mix well. Add in the cooked rice and stir well. Transfer to a platter prior to serving.
