Orzo and Veggie Casserole Recipe
1 c of Orzo pasta; uncooked
1 c of carrots; grated
1/4 lb of asparagus; sliced into an inch pieces
3 green onions; chopped finely
3 cloves of garlic; sliced
1 Tbsp of soy sauce
1 c of tomatoes w/ juice; stewed & crushed
2 c of Napa cabbage; shredded
Cook the pasta (orzo) as stated in the package instructions. Drain. Preheat the oven up to 350 degrees F.
Meanwhile, combine pasta, scallions, asparagus, carrots, soy sauce and garlic altogether in one large mixing bowl. Mix ’til well-blended.
Pour this mixture into an oiled baking dish. Top it with shredded cabbage followed by tomatoes.
Bake the pasta mixture (covered with foil) for 15-20 minutes.
