Meatballs Casserole Recipe
1/3 c of milk
1/8 tsp of pepper
1 pound of beef; ground
1 canned soup water
1 canned tomato (or celery or mushroom) soup; diluted
1/4 c of onion; minced
1/4 c of rice; not cooked
1/4 c of cracker (preferably Graham crumbs)
1/4 tsp of salt
1/4 tsp of seasoning (poultry)
2 Tbsps of bacon grease
2 cloves of garlic; crushed
Place the beef, garlic, onions, crumbs, rice, milk, pepper, poultry seasoning, and salt in a large bowl. Using a fork, mix the ingredients ’til blended well. Mold it into balls; and set aside.
Preheat a skillet (electric) up to 340 degrees F. When hot, add the bacon drippings. Add in the meatballs.
Stir ’til the evenly browned. Pour in the tomato soup. Stir well. Reduce the heat to 220 degrees F. Cover the skillet. Simmer for 1.25 hours.
