Hotdog and Veggie Casserole Recipe
Salt and pepper
2 cloves of garlic; crushed
2 Tbsps of margarine
1 package of hotdogs; sliced crosswise
1 package of veggies (frozen); mixed
1 canned tomatoes (stewed, 16 oz)
1 of onion (medium)
1.5 c of minute rice
Place a large nonstick skillet with margarine over medium heat. When the margarine melts, saute the garlic and onions. Once the garlic turns light brown and the onion becomes transparent, add in the hotdogs ’til cooked.
Pour in 1.5 cups of lightly-salted water in a small pot, and bring it to a boil. Blanch the frozen mixed veggies ’til tender but firm and color is more vibrant. Remove from the heat.
Meanwhile, once the hotdogs are cooked, add in the tomatoes as well as the vegetables (together with water). Stir well; and then add the rice. Stir some more to mix well. Let it simmer for 15-20 minutes. Use it as topping for saltine crackers or crusty bread.
