Hearty Turkey and Potato Chowder Recipe

Salt and pepper
Parsley; chopped
1 c of rice/6 potatoes; cubed
2 chicken cubes (bouillon)
2 onions; minced
6 pcs of carrots; sliced
6 stalks of celery; sliced
1 turkey carcass

Soak the turkey carcass in a large pot with lightly-salted water and chopped onions. Bring to a boil for two hours (or when meat is tender) over medium-high heat.

When done, turn off the heat. Take out the turkey and let it cool on room temperature. Set the broth aside.

Remove the bones from the cooled turkey and discard. Slice the turkey meat into 1/8-inch strips (or you may just dice).

Toss it back into the pot together with the celery, bouillon, potatoes, and chopped parsley. Season with salt and pepper, to taste. Cover
and simmer for an hour. Stir often.
