Fish Soup Recipe
1/4 c of onions; chopped finely
1/4 c of flour
1/4 c of margarine
1/4 tsp of dill weed
1 tsp of salt
1 pkg codfish (10 oz); frozen
1-1/2 or 2 c of potatoes; cooked & cubed
1-1/2 c of bread crumbs (soft)
1/4 c of butter/margarine; melted
2 c of milk
2 Tsps of lemon juice
2 Tbsps of brown mustard (spicy)
Dash of pepper
Place a large saucepan over medium heat. Once it is hot, saute the margarine ’til it melts; and then, saute the chopped onions. Add in the flour and milk.
Stir the sauce constantly ’til it thickens. Afterward, sprinkle it with salt and pepper. Pour in the lemon juice and dill weed. Stir the sauce constantly.
Preheat the oven up to 350 degrees F.
Cut the fish into small cubes. Add this to the sauce together with the potatoes. Pour this mixture into a two-quart casserole. Add in the crumbs the 1/4 cup of margarine. Bake for half an hour. Serve with toast or crusty bread.
