Crisp Salmon Patties Recipe
1/4 c of cornmeal
1 canned salmon; chopped
1/4 c of relish
1/4 c of mayonnaise
1 carrot; diced
1 lemon
2 Tbsps of Veggie oil
Combine the chopped salmon, mayonnaise, relish, and carrots (or celery) altogether in a large mixing bowl. Squeeze the lemon juice and grate some lemon rind over the salmon mixture. Mix well, and mold into burger patties. Sprinkle or coat with cornmeal.
Place a large nonstick skillet with veggie oil over medium heat. When the oil is hot, fry the patties ’til both sides are crisp and golden.
Remove from the heat and transfer to a platter with paper towel to drain excess fat. Cover to keep warm. May be served with soup, salad, or may be served in buns
