Cornbread Taco Pizza Recipe

1 lb of beef; ground
1 package of mix corn muffin (8 1/5 oz)
1 package of seasoning mix (Taco, 1.25 oz)
1 package of cheese (cheddare, 8 oz); shredded
2 cloves of garlic; crushed
1 onion (medium); chopped
1 Tbsp margarine

Preheat the oven up to 400 degrees F.

Prepare the corn muffin as stated in the package instructions. Spread the batter evenly onto an oiled pizza pan (12 inches). Bake it ’til light brown (approximately 8-10 minutes). Remove from the oven; and then set aside.

Place a medium-sized skillet with margarine over medium heat. When the margarine melts, toss in the garlic and onions. Once the garlic turns light brown and the onion becomes transparent, add in the beef.

Fry until light brown. Drain the fat. Add the taco seasoning to the beef. Stir some more. Remove from the heat and set aside.

Sprinkle a cup of shredded cheese over the baked corn muffin crust. Evenly spread beef mixture over it; and top with what is left of the cheese.

Bake it at 400 degrees F ’til the cheese melts (approximately 4-5 minutes). You may pretty it up with shredded lettuce, diced tomatoes and garlic sauce prior to serving.
