Chili Beans Sans Meat Recipe
1 c of kidney beans
1 c of chili beans (in gravy)
1 canned tomatoes; stewed
1/2 c of celery; sliced
1/4 c of onion; minced
1 Tbsp of chili powder
1 c of rice; cooked
Salt
Sour cream, hot sauce & cheese; grated (optional)
Place a medium-sized saucepan with butter or margarine over medium heat. One the butter melts, toss in the garlic and onions. Once the garlic turns light brown and the onion becomes transparent, add in the celery, and stewed tomatoes. Stir well and simmer for about 5 minutes.
Add in the chili beans and kidney beans. Cover the saucepan and let the mixture simmer for about 10-15 minutes longer. Stir in the rice. Once the rice is cooked, top it with sour cream and/or grated cheese
