Beef Pot Roast Recipe
1/2 c of soy sauce
1 Tbsp of veggie oil
2 c of coffee (regular or decaf)
2 cloves garlic; chopped
1 tsp of oregano
2 onions (large); minced
4 bay leaves
4 lbs of beef roast
Place a large nonstick skillet with veggie oil over medium heat. When the oil is hot, cook the roast ’til light brown.
Meanwhile, combine the soy sauce, coffee, bay leaves, garlic cloves, oregano and half of the onions altogether in a crockpot. Add in the roast.
Top it with the remaining half of the onions. Cover and cook it on low heat for about 5 hours. Afterward, remove the cover to baste the top of the onions. Roast it well. Cover it again. Proceed with cooking for 4 hours more. Slice the beef and serve it with crusty bread.
