Beef Barbecue Recipe
2.5 to 3 lbs of boneless roast
1 c of strawberry preserves
2 tbsps of prepared mustard (Dijon or regular)
1 onion (small); chopped
1 bell pepper (green or red); chopped
1 c of barbeque sauce
1/2 c of brown sugar
Preheat the crockpot. Spray it with nonstick cooking spray. Combine the strawberry preserves, chopped onions, bell pepper, mustard, brown sugar, and barbecue sauce altogether in one large mixing bowl. Mix it well.
Place the boneless roast in the crockpot. Pour the strawberry mixture over the roast. Cook it on low heat for approximately 6 hours (may be increased to 7 hours depending on the desired degree of doneness).
Once cooked, take out just the boneless roast from the crockpot, and transfer it to a platter. Cut the roast into thin, bite-sized slices; and then transfer it back into the crockpot.
Cook it for approximately 10-15 minutes longer. Use it as sandwich filling, topping for French bread or filling for pita bread.
