Baked Zesty Tuna Recipe


Baked Zesty Tuna Recipe

1/2 c of milk
1 Tbsp of margarine/butter
1 Tbsp of flour (plain)
1 lb of pasta spirals
2 cans of tuna in water; not drained
2 cubes of stock of chicken
1 lb of veggies (frozen mixed)
1 Tbsp of sauce (sweet chili)
1 c of Cheddar (or Parmesan) cheese; grated (optional)
Chopped parsley (optional)

Cook the pasta spirals according to package instructions. Drain and set aside in a large bowl.

Meanwhile, place a small saucepan with butter over medium heat. When the butter melts, add in the flour and stir well ’til it dissolves. Pour in the milk.

Add the broth cubes; and stir ’til well blended. Add in the vegetables and ’til tender (but not mushy) and vibrant. Add in the tuna and sweet chili sauce. Stir well.

Reduce the heat. Cover the mixture and let it simmer for about 7-10 minutes ’til desired consistency. Stir occasionally to avoid prevent the sauce from sticking to the saucepan, and burning. Remove from heat.

Preheat the oven up to 350 degrees F.

Pour the tuna mixture over the cooked pasta spirals. Toss well to evenly coat the pasta. Transfer to a baking dish. Top with grated Mozzarella (or Cheddar) cheese and chopped parsley.

Cover with foil. Bake ’til the cheese melts. Remove the foil and bake ’til the top surface turns light golden.
