Baked Chicken with Raspberry Recipe
1/4 c of butter; melted
1 c of raspberry jam (seedless)
2 tsp of vinegar (balsamic)
1 Tbsp of soy sauce
1/2 tsp of red peppers; crushed
3 lbs of chicken leg/thigh combo
Preheat the oven for 350 degrees F. Lay the chicken pieces in a shallow baking pan. Smear it with butter. Cook it in the oven for half an hour.
Meanwhile, mix the jam, balsamic vinegar, soy sauce, and crushed red pepper in a small bowl. Whisk it well and pour over the chicken; and bake for another 10-15 minutes. Garnish with a sprig of parsley. Serve hot with buttered vegetables and fried rice.
